What to make for dinner is a gratin recipe from zucchini.

2 tbsp. of duck fat (or olive oil);

3 bulbs, very finely sliced;

180 g basmati rice;

7 medium zucchini, finely chopped (can be replaced by a regular zucchini);

500 ml of chicken or vegetable broth;

150 g of hard cheese;

sea salt and ground black pepper;

olive oil.

Recipe for making gratin from zucchini for dinner:

  1. Place a large frying pan on low heat, add duck fat (or olive oil) and some water. When the fat has melted and warmed up, add the sliced onions and fry until they are soft. Meanwhile, rinse the rice thoroughly with cold running water.

  1. When the onions are ready, add the zucchini and rice into a pan. Mix and pour the hot broth. Add the fire and cook for 5 minutes, stirring periodically. Liquid should remain in the mixture, so add a little broth if necessary. Remove the pan from the fire and add 100g of grated cheese to it. Season with salt and pepper to taste.

  1. Apply oil to the baking mould or shallow ceramic pan. Place the mixture in the mould so that most of the zucchini slices are on top – then the liquid will boil less. Sprinkle with the cheese that’s left over.

  1. Put it in an oven heated to 190C for 20 minutes. The top of the gratin should brown, and the rice should be completely boiled and soaked up most of the liquid. Serve with meat or fish and fresh vegetable salad. If desired, sprinkle corn on top.
